Mutton Meat

Mutton is the meat of mature sheep, harvested between 2 to 3 years of age to produce mutton cuts. This is one of the meats that can be used to make birria, a Mexican meat stew or soup. Mutton is often described as having a strong, grassy taste that some consider to be gamey. Check out our homemade recipe below!

Birria de Cordero

INGREDIENTS

  • 1 bag of Hacienda del Valle pre-cut Mutton Meat

  • dried guajillo chili (15 chilis)

  • garlic (6 cloves)

  • 10 cloves

  • 10 peppercorns

  • 5 green tomatillos

  • Beef bullion (2 tablespoons)

  • Salt ( 1 tablespoon )

  • Vinegar (half cup)

  • Can of beer (only need 1/2 cup)

INSTRUCTIONS

  1. Rinse a bag of Hacienda del Valle’s pre-cut mutton meat under cold water.

  2. To a blender add, add the condiments from the list above, and blend thoroughly until a light paste is created. Add room temperature water to lighten the consistency as needed.

  3. To a bowl, add your meat and pour the mixture over, straining with a mesh colander as you pour.

  4. Allow the meat to marinate in the paste for 2 hours.

  5. After marinating, transfer the meat to a pot and cook on medium heat an additional two hours, checking on it often to make sure it is not getting stuck to the bottom of the pot. Cook until meat is tender.

  6. You can serve it as tacos or a soup, garnished with onion, cilantro and lime.
